The new executive chef at New York’s Aquavit is an accomplished Swedish chef, Marcus Jernmark. He began his career at Aquavit as a sous chef in 2009, eventually replacing Marcus Samuelsson as head chef. He has since worked on the restaurant’s menu and the dining room to create a new and exciting experience for diners. However, the chef has left the position two months ago, and his replacement is Emma Bengtsson.
The chefs at Aquavit are renowned for their dedication to seasonality. They focus on Scandinavian cuisine, with the seasonality of ingredients being an important factor in the menu. Marcus Jernmark of New York’s Aquavit is also a Michelin-starred chef. The Swedish Legends Tasting Dinner features dishes from Aquavit and his other restaurants. The dinner is part of the North Nordic Food Festival, an event created by Honest Cooking and presented by Visit Sweden.
After a long career in Sweden, Jernmark relocated to New York in 2007. In 2007, he established Frantzen, a restaurant that achieved three Michelin stars and was named among the world’s top one hundred restaurants.
